NOTE: Start drying out tofu about 2.5 hours before serving.
INGREDIENTS
1 pound extra-firm tofu, cut into 1/2-inch slices
1 tbsp vegetable oil
1 tbsp unsalted butter or vegan butter
1 to 2 tbsp tamari
1/2 to 2/3 cup barbecue sauce
PREPARATION
1. Place tofu slices in single layer between clean, dry dish towels. Press to remove water from the tofu — let stand for 2 hours. Replace soaked towels once or twice, until very little water is left in the tofu. (If you can press and dry the tofu quickly to use immediately, it will be less crisp but still edible.)
2. Place rack 5 to 6 inches from broiler and set heat to the highest broiler setting.
3. In a large skillet over medium heat, add oil and butter, swirling to cover pan bottom. Pour tamari into a small, shallow dish and quickly dip both sides of a single tofu slice; then place in skillet — repeat with remaining slices.
4. Cook tofu until golden brown on both sides — 2 to 3 minutes per side. As tofu browns, spread half the barbecue sauce on a small rimmed baking sheet.
5. Place cooked tofu on the barbecue sauce; then cover with remaining sauce.
6. Broil, turning once, until the sauce thickens and bubbles, — 2 to 3 minutes per side. Serve hot.
NOTE Recipe can be scaled up or down depending on amount of tofu used.
