Ribs: Baby Back Instant Pot Max®

YIELD 1 rack

INGREDIENTS

1 rack baby back pork ribs (2 to 3 pounds; membrane removed)

RUB:
1 tbsp brown sugar 
1 tbsp chili powder 
1 tsp dried parsley
1 tsp salt
1 tsp pepper
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika (optional)
1/4 tsp cayenne (optional)

LIQUIDS:
1 cup water
1/2 cup apple cider vinegar
some onion slices (optional)
3 garlic gloves, sliced (optional)

PREPARATION

1. Cover both sides of the rib rack with RUB and rub in well. Let sit in fridge for several hours or overnight.

2. Place Instant Pot trivet and LIQUIDS in Instant Pot Max®.

3. Curl up the ribs so they stand up on their ends (wrapping them around on the inside of the pot).

4. MAX - 22 minutes - Natural Release - No Warming.

5. When done, serve as is, or, slather with BBQ sauce and finish under an oven broiler (about 5 minutes) or in a 450°F oven (10 to 15 minutes).
