YIELD 2 servings
INGREDIENTS
Kosher salt
5 ounces linguine
2 tbsp unsalted butter
1 tbsp white (or red) miso
2 ounces Parmesan, finely grated (1/2 packed cup)
some nori thinly sliced for garnish (optional)
some black, white and/or toasted sesame seeds for garnish (optional)
PREPARATION
1. Cook pasta in salted water to a boil. When almost done, start sauce.
2. In a a small pan over medium heat, add butter, miso and 2/3 cups pasta water; whisk until miso breaks down and liquid is uniform — 1 to 2 minutes.
3. Add pasta and Parmesan and continue stirring vigorously (with a pasta fork or spatula) until cheese is melted and sauce emulsifies.
4. Plate and garmish.
