Pancakes: Buttermilk

INGREDIENTS

BOWL ONE (whisk together):
3/4 cup flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
cinnamon (optional)
nutmeg (optional)

BOWL TWO (whisk together):
1 egg
3/4 cup buttermilk
1.5 tbsp canola oil
1/4 tsp vanilla

PREPARATION

1. Add BOWL TWO into BOWL ONE. Fold until just mixed; it will be lumpy.

2. Make pancakes.

NOTE If using yoghurt instead of buttermilk —
1/2 cup yoghurt
1/4 cup milk

NOTE If using berries, only add 1/2 cup after mostly mixed.
