Mincemeat: Vegetarian

INGREDIENTS (all into the stewing pot)

3 Granny Smith apples, peeled, cored, well-chopped
1/4 cup chopped pitted prunes, well-chopped
1/4 cup golden raisins, well-chopped
1/4 cup dried currants
1/4 cup firmly packed dark brown sugar
2 tbsp molasses
2 tbsp brandy
2 tbsp orange juice
2 tbsp unsalted butter, cut into pieces
1 tbsp dark rum
1 tbsp grated orange peel
1/2 tsp ground cinnamon
1/8 tsp ground cloves
1/8 tsp ground allspice
1/8 tsp ground nutmeg
Pinch of salt

PREPARATION

Cook over low heat about 1.5 hours until the mixture is thick, stirring occasionally. Cool completely before using.

NOTE This recipe is good for making one batch of mincemeat bars (two jelly roll pans) and can be doubled if more is desired.
