Cranberry Relish: Spicy

INGREDIENTS

SMALL TALL SAUCEPAN:
1/3 cup water
1/2 cup sugar
1 large jalapeño, seeded and finely diced
1 to 2 tsp lemon juice
1/4 tsp salt
1/8 tsp cayenne

INDIVIDUALLY (ready to use):
1 tsp grated ginger
6 oz cranberries, rinsed

PREPARATION

1. Place SMALL TALL SAUCEPAN over medium-high heat, stir with a wooden spoon to dissolve sugar, and then simmer about 2 minutes.

2. Add ginger and cranberries, and bring to a boil. Reduce heat to medium and let mixture cook, stirring occasionally, until cranberries have softened and no liquid remains in pan, about 10 minutes.

3. Let cool and taste. Add more cayenne or jalapeños if desired.
