Cookies: Krumkake

Cookies: Krumkake

YIELD 30 to 40 cookies

INGREDIENTS (single bowl)

1 cup salted butter, creamed
1 tsp vanilla extract
5 oz evaporated milk (2/3 cup)
1 cup sugar
1.5 to 2 cups flour
2 large eggs

PREPARATION

1. Plug in krumkake iron.

2. Combine all ingredients with an electric hand-mixer.

3. Start making the cookies (trial and error), roll while hot on a wooden krumkake dowel and stack them on a sheet pan.

TO SERVE: Eat plain — or — fill with whipped cream and sprinkle with crushed candy cane — or — pour a bit of liqueur like Grand Marnier over the whipped cream. You can also make them in the shape of baskets and fill with them with chopped sweet pear, cinnamon and a teaspoon of plain yoghurt or crème fraiche. Lots of ways to fill them right before eating (because they’ll get soggy if they sit filled).
