Cauliflower: Roasted Seasoned

INGREDIENTS

1 head cauliflower broken into florets or sliced into 1/4-inch slabs
1 to 2 onions, cut into fat chunks or 1/4-inch slabs

PLAIN AND SIMPLE:
olive oil to coat
salt and pepper to taste

FOR A SPICY MID-EAST FLAVOR (double amounts if needed):
1 to 2 tbsp extra-virgin olive oil
1 tsp dried thyme
1/2 tsp ground cumin
1/2 tsp ground turmeric
1/2 tsp kosher salt
2 tsp finely grated lemon zest

PREPARATION

1. Preheat oven to 425ºF.
2. Toss cauliflower and onion in whichever mixture you choose.
3. Spread out in single layer over a parchment covered baking sheet.
4. Bake for 15 to 20 minutes; remove from oven and toss; return to oven for another 15 to 20 minutes.
