Cauliflower: Blackened

YIELD 4 to 6 servings

INGREDIENTS

BOWL (mixed together):
1 large cauliflower head (about 2 pounds), core and leaves removed, head cut into large 2-inch pieces
2 to 3 tbsp olive oil
1 tsp smoked paprika
1 tsp kosher salt
1 tsp onion powder
1 tsp garlic powder
1/2 tsp red-pepper flakes (or 3/4 tsp Aleppo Red Pepper)
1/2 tsp dried thyme
1/2 tsp black pepper

PREPARATION

1. Place rack in center of oven and then preheat to 450°F.

2. Spread BOWL out as one layer on large rimmed sheet pan.

3. Bake on center rack 20 minutes.

4. Remove and stir, then bake another 20 to 25 minutes until deep golden brown and cooked through.
