Basically, use as many Brussels sprouts as will fit in your pan and adjust seasonings accordingly.
INGREDIENTS
1 pound Brussels sprouts (bottoms trimmed and sliced in half lengthwise)
4 to 6 tbsp olive oil (coating bottom of large ovenproof frying pan)
5 to 10 slender-ish garlic cloves
Salt and pepper, to taste
Balsamic vinegar, to taste
PREPARATION
1. Heat oven to 400°F.
2. Over medium-high heat on the stove, in a large ovenproof frying pan, heat oil until it shimmers.
3. Quickly place sprouts — cut side down — in one layer in frying pan. Then put in garlic and sprinkle with salt and pepper.
4. Cook, undisturbed, until sprouts begin to brown on bottom, then transfer pan to oven and roast about 25–30 minutes (shake the pan occasionally). Check them every ten minutes and DO NOT let them burn.
5. Once out of the oven but still in the pan, pour some balsamic vinegar on them and then serve hot or warm.
