Banana Bread

Bread: Banana

YIELD 1 loaf

INGREDIENTS

SMALL BOWL (whisked together):
2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt

INDIVIDUALLY (ready to use):
4 tbsp salted butter, soft
1 cup dark brown sugar
1 large egg
3 large, soft bananas, skins almost black
1 cup slivered blanched almonds, toasted and then roughly chopped
1/4 tsp lemon or orange extract

PREPARATION

1. Preheat oven to 325°F; this bakes on a center-positioned rack. Butter a bread loaf pan.

2. In a large bowl, with a potato masher, cream the butter.
• Then, add sugar and cream again
• then, add egg and cream again
• then, add bananas and cream again
• then, add the extract and cream again.

3. With a rubber spatula, alternately add SMALL BOWL and almonds until just mixed. Do not over-mix.

4. Bake for 1 hour, then tent the top with foil and bake 30 minutes more or until a knife poked all the way down into the center comes out relatively clean. Cool at least 10 minutes before cutting.
